Quinoa & Walnut Crusted SalmonIngredients: (Serves 4)

Method:
In a bowl combine the cooked and cooled quinoa, walnuts, parsley and chia seeds. In a separate bowl combine mustard, honey and oil and use this to coat the salmon. Then press the quinoa mixture into the salmon and bake for 15 minutes or until cooked as desired. Serve hot or cold the next day.
