This nourishing mushroom based soup is warming, tasty and full of immune stimulating shiitake mushrooms.
Ingredients: (Serves 4)
1 tsp ginger
1 tsp smoked paprika
1 tsp cumin seeds
1 Tbsp sesame oil
3 cups vegetable stock
1 cup mushrooms roughly chopped
1 cup shiitake mushrooms
1/2 cup rice noodles (thin)
1 nori sheet chopped into pieces
1 cup greens (silverbeet or spinach)
1 cup chopped tofu (optional)
Saute the spices in a pot with oil. Add in stock along with mushrooms and nori. Chop tofu and add into the pot. Simmer on a low-medium heat for approx 5 minutes. Add the rice noodles into the pot, cover until noodles are soft and everything is cooked. When the soup is almost ready, mix in the chopped greens and take of heat. Serve hot and store leftovers in the fridge for the next day.
